Top chef gives lessons to school cooks

Warwickshire’s answer to Jamie Oliver is going back to school to share his expertise with the county’s school cooks.

Professional chef Mark Higgins, who has cooked for the likes of Michael Schumacher and the Manchester United team, will visit a number of school kitchens across the county.

The move comes as Warwickshire County Council’s catering arm has announced a 30% rise in the daily take up of primary school meals since the start of the school year. Warwickshire wants to improve its services even further and is working in line with Government recommendations for the training of catering staff. Mark’s role will be to visit school kitchens to assess skills training needs and make recommendations.

Mark said: “I am hugely impressed by Warwickshire’s commitment to healthy school meals. I hope that my work will help provide catering staff with new training opportunities and an even better service for pupils.”

Although this is Mark’s first foray into school meals, he works both as an independent chef and as a catering consultant specialising in staff training. Mark has over 25 years experience in the hotel and catering industry including head chef positions both in London and the Midlands. He has also achieved the coveted two AA Rosettes status for his cooking.
